Carrot halwa

I always wonder how few dishes taste great with little number of ingredients. Carrot halwa is one of them. This is my first dish in my cooking segment. Since my tenth grade I am fond of this recipe. Sentimentally I would like to start my blog with this recipe.. hehe... here goes ....

CARROT HALWA

Ingredients:

Carrot(Grated) - 1 cup
Milk - 1 cup
Sugar - 1 cup
Ghee - 1/4 cup (Can less or add more according to taste)
Cashew and Sultana(dry grapes) - few
Cardamom - 2

Method:

Even the carrot is grated, it will be thick to be a soft halwa. so I always grind the grated halwa with little milk in a blender

In a thick bottomed vessel, boil the milk.
once the milk started boiling, add the ground carrot and let the carrot cook
after 10 minutes, once the carrot is cooked, add the sugar
let the mix boil till it thickens and stir occasionally
once it starts thickening, add ghee and mix well
when it comes to the halwa consistency, add the cardamom, cashew and dry grapes fried in ghee

allow it to cool and serve.
can refrigerate and use for atleast 1 week
